2. Fermentation and yeast processing:
All fermenters are cylindroconical vessels with dished tops and a working pressures of approximately 0.8 Bar. Cooling is achieved using glycol and all the fermenters having 2 jackets on the straight sides and some also having cone cooling. The exception being 5 vessels which have slanting bottoms in lieu of conical ones. These vessels were used predominately as conditioning tanks.
Generally there is the following fermentation tank volumes:
11 pcs CCT’s, gross volumes 1900 – 2000 hl
5 pcs Slanted Tanks, gross volumes 1200 – 2200 hl
The vessels are made in 1973 – 1980 and have the following characteristics::
5 x 2000 hl with 3 jackets each6 x 2000 hl with 2 jackets each2 x 1200 hl with slanting bottoms and 2 jackets3 x 2200 hl with slanting bottoms and 2 jackets.
Yeast processing equipment:
Yeast Culture 2 x 20 hl tanks – glycol cooled 1 x 80 hl tank – glycol cooled
Yeast Storage: -3 x 30 hl storage tanks
Yeast Plant, rated at 30 hl / hour, made by Alfa-Laval and consisting of the following equipment:
